Most days, if you walk into my kitchen, you’ll find a vegetarian slow cooker recipe in the crock-pot.
I love the simplicity of taking the meal out of the freezer or fridge and putting it into the slow cooker. It fits into my busy morning routine and takes the stress out of my day.
For the last three years, I have been methodically collecting my absolute favourite vegetarian slow cooker recipes and have amassed quite a collection that I’ve either found, created, or adapted (to make vegetarian). Most of my slow cooker recipe collection is vegetarian, but some are vegan (like one of my all-time favourites that made this list!), and I keep a few meat recipes on hand for my husband if he’s feeling especially carnivorous.
Here are my – and most importantly, my meat-eating husband’s – five best vegetarian slow cooker recipes.
The Recipes
1. Quinoa Black Bean Crock Pot Stuffed Peppers

The flavours melt together and my husband usually requests this if I’m stuck for ideas when meal planning. I often make my own refried beans and enchilada sauce and buy dried beans to keep costs low- and is consistently one of the best slow cooker meals when craving Mexican flavours.
I love serving this with either homemade or store-bought tortilla chips.
2. Slow Cooker Tikka Masala

I created this recipe out of desperation and it turned out to be the quickest and easiest Indian cuisine to make at home. This recipe is a winner with either homemade or store-bought tikka masala paste and pilau rice.
3. Carrot & Parsnip Soup

I’m a sucker for oven roasted veggies, and this recipe was born about of a surplus in oven roasted carrots and parsnips. It’s easy, vegetarian, and if you leave out the cream (which is optional) can also be vegan. This is best served on a cold night with warm sourdough bread.
4. Crock-Pot Veggie Loaded Baked Potato Soup

Not the healthiest of recipes as it is, as advertised, fully loaded – but it hits the spot when needing something filling and compared with pasta or other takeaway staples, this is actually not the bad in the caloric arena. Every time I make this, it comes out creamy and delicious, particularly on those cold winter days.
I love lightly blending it to a hearty consistency to taste the potatoes in all their glory.
5. Eat the Rainbow Black Bean Soup

When I’m craving veggies, I turn to this recipe full of amazing whole ingredients, including black beans, red cabbage, and carrots. Cumin and oregano bring the veggie flavours together – and best of all, it’s vegan!
